Low-Fat Blueberry Pancakes


1 egg separated
2 cups plain low-fat yogurt
½ cup Tree Top Apple Sauce
¼ cup sugar
1 teaspoon vanilla extract
2 teaspoons baking soda
½ teaspoon salt
1¾ cups flour
3 egg whites
1 pint (2 cups) blueberries, rinsed & patted dry


Add yogurt, apple sauce, sugar & vanilla to egg yolk. Stir with rubber spatula to mix, then stir in baking soda, salt & flour until blended. Beat egg whites with an electric mixer until stiff peaks form. Stir ½ egg whites into the batter until blended. Gently fold in remaining until there are no white streaks. Cook on griddle to desired brownness on both sides.
