Terrific Brunch Cake
3 cups Tree Top Green Apple Slices
1 cup Tree Top Apple Sauce
1 cup granulated
½ cup butter,
1 ¼ cups
1 tsp baking
1 tsp ground
½ tsp freshly
½ tsp ground
½ tsp salt
½ cup golden
granulated sugar mixed with 1 tsp ground cinnamon
Preheat oven to 325 F. Butter an 8-in
round cake pan. Whisk granulated sugar, butter and egg together in a
bowl. Stir in two-thirds of the Tree Top Apple Slices. Sift flour,
baking soda, cinnamon, nutmeg, allspice and salt together. Add egg
mixture and Tree Top Apple Sauce along with raisins, stirring until just
blended. Pour into prepared cake pan and smooth top. Arrange remaining
Tree Top Apple Slices in a pattern on top and press into batter.
Sprinkle with cinnamon and sugar mixture. Bake until golden and springs
to the touch, about 50 minutes. Let cake stand on a wire rack for 10
minutes, then turn out and let cool completely, about two hours.
Dust with powdered sugar and cut into wedges to serve. Garnish plate with fresh Tree Top Green Apple Slices.
