Zucchini Bread


A Fall Favorite

Ingredients

3 eggs
2 cups sugar
1 cup Tree Top Apple Sauce
1 teaspoon vanilla
3½ cups flour
½ teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon salt
2 teaspoons baking soda
2 cups grated zucchini, raisins and/or nuts if desired

Directions:

Mix together the sugar, eggs and apple sauce. Add vanilla. Sift flour, baking soda and spices together, and add alternately with the zucchini. Stir in nuts or raisins and mix well. Bake in greased bread pans at 350 F for 45 minutes or until toothpick comes out clean.

Serving Suggestions:

Makes 6 mini or 3 regular loaves.
